Pasta Alfredo with a difference – Whole grain linguine Alfredo with prawns
Pasta Alfredo has become one of the classics of Italian cuisine. Easy to prepare and tasty, the dish is now available in countless variations. Several myths entwine around the origin of the Pasta Alfredo or real Fettucine Alfredo. The dish began in Rome in 1914, when Alfredo Di Lelio, the operator of the Osteria on Via della Scrofa, added a pasta dish to the menu that would soon bear his first name. The “Fettuccine Alfredo” created by him was simple and hearty, lots of Parmesan cheese and even more butter.
The intention was to strengthen the constitution of his wife Ines, who was weak on her feet after the difficult birth of his first son. And because the noodles also tasted good, he included them in the menu.
Stars from Hollywood who were on their honeymoon in Rome are said to have been so impressed that they took the dish with them to the USA. Allegedly it was the Hollywood star Douglas Fairbanks. The foundation stone for a myth was laid.
Fettucine Alfredo can be found today mainly in the USA. In Rome the restaurant Il vero Alfredo serves the original Fettucine Alfredo. The original recipe contains only butter, cream and parmesan.
Our variation of Pasta Alfredo
Inspired by a contribution in Easy Tasty, the dish was expanded to include spinach, shrimps, onions and chilli and cooked with wholemeal linguine.
The nice thing about Pasta Alfredo is that the dish can be prepared in many variations due to its simple basic structure.

Pasta Alfredo einmal anders – Vollkorn Linguine Alfredo mit Garnelen
Ingredients
- 2 EL Butter
- 3 Knoblauchzehen
- 1 Schallotte
- 1 TL Chillipulver
- 200 Gramm Krabben
- 150 Gramm Bacon
- 100 Gramm Spinat
- 200 ml Koch-Sahne
- 200 Gramm Vollkorn Linguine
- 100 Gramm Parmesan
- Salz und Pfeffer nach Bedarf
Instructions
- Spinat waschen und putzen, Stiele entfernen, Knoblauch und Schalotte schälen und klein hacken. Chili längs halbieren und die Kerne entfernen. Petersilie putzen und zupfen.Die Garnelen waschen und gut abtropfen lassen.
- Erhitzen Sie die Butter bei mittlerer Hitze in einem großen Kochtopf, bis sie leicht braun ist. Geben Sie die Garnelen hinzu und würzen Sie sie mit Salz und schwarzem Pfeffer. Wenn Sie frische Garnelen verwenden, braten Sie sie an, bis sie auf beiden Seiten rosa sind. Wenn Sie fertige Garnelen verwenden, nur kurz erhitzen. Dann die Garnelen aus dem Topf nehmen und beiseite stellen.
- Braten Sie den Knoblauch, die Zwiebeln und den Speck kurz an. Dann den Spinat hinzufügen und rühren, bis er zusammenfällt. Mit der Kochsahne aufgießen und die Chilischote dazugeben. Alles im Topf verrühren und die Sauce leicht aufkochen und einkochen lassen (ca. 5 Min.).
- Dann die Chilischote herausnehmen und die Vollkorn-Linguine (müssen gut abgetropft sein) dazugeben. Mischen und dann den Parmesankäse unterrühren. Bei Bedarf nochmals salzen und pfeffern und mit Petersilie bestreuen. Zum Schluss die Shrimps wieder in den Topf geben und kurz schwenken, bis alles warm ist.
- Servieren und genießen.Ein leichter Weißwein passt gut dazu.
- Schmeckt auch gut als Variante mit Rucola statt Spinat und Wildscampis.
