- 500 gram Matjes herring in natural or pickled in oil
- 1 red onion
- 2 pickled gherkins
- 1 red pepper
- 1 packet of pumpernickel
- salt, pepper, paprika powder, fish spice as you require
- 1 tea spoon fig mustard
- Cut the matjes herring into small, fine cubes. Clean the pepper, peel the onion, drain the cucumber. Cut everything into small, fine cubes. Mix all ingredients well and flavour with salt and pepper, the paprika powder and the fish spice. Spread the pumpernickel with fig mustard and spread the salad in small heaps on the pumpernickel with a tablespoon.
